Introduction
Mostkids are picky and each one has their own favorites as well as foods they willnot touch as they are a specific color. The idea to get your kids to eat isoften sneaky but you have to fool them in most cases. You can add things theydo not like to dishes they like just by chopping them up very fine such asbroccoli or onions. Along with this, you can always make the dish look fun andexciting with items they like to eat which will entice them to try the dish. Inmost cases, when they try something they will like it and most of your problemswill be gone. Just try to make meal time fun and remember eat the same thingyou serve your kids so they will see you eat which will also help get them toeat.
Chapter 1 - Beef Recipes
Salisbury Steak
Ingredients
4 lbs hamburger
2 oz dry onion soup mix
1 cup Italian seasonedbread crumbs
½ cup milk
½ cup all-purpose flour
4 tbsp vegetable oil
4 cans cream of celerysoup
2 oz dry au jus mix
1 ½ cups water
Preparation
In a bowl blend the onionsoup mix, bread crumbs, milk, and hamburger meat with your hands. Shape into 16patties. Heat the oil in a large skillet. Roll the patties in a flour, andbrown on both sides. Just brown, do not over cook. Place the patties in a slowcooker similar to a pyramid. In another bowl, mix the water, soup, and au jusmix and pour over the patties. Cook on low for 4 ½ hours or until hamburger iswell done. Makes 16 servings
KidsCasserole
Ingredients
1 lb rotini pasta
2 lb hamburger
1 lb Italian sausage
1 1/2 cup chopped onion
1/2 cup chopped celery
2 minced garlic cloves
2 tbsp minced green bellpepper
salt and pepper to taste
30 oz diced tomatoes
30 oz tomato sauce
4 cups shredded Italiancheese
3 cups shredded Cheddarcheese
Preparation
Preheat oven to 350degrees Fahrenheit. Cook pasta as directed on package and set aside. Cook thehamburger and the sausage until brown and crumbled around 10 minutes. Add thegarlic, celery, onion, salt and pepper. Stir and cook another 5 minutes. Removefrom heat and add the tomato sauce and tomatoes. Grease a large casserole dish.Spread the pasta in the bottom of the dish. Sprinkle with the Italian cheese,cover with foil. Bake for 45 minutes, remove foil, and sprinkle with cheddarcheese. Bake for another 5 minutes or until the cheese is melted. Makes 12 servings.
MexicanShepherds Pie
Ingredients
3 lb hamburger
2 chopped onions
½ tsp garlic powder
salt and pepper to taste
2 14.5 oz cans dicedtomatoes
2 packages taco seasoningmix
1 1/2 cups hot water
2 11 oz cans whole kernelcorn
2 packages corn muffinmix
2 cup shredded Cheddarcheese
2 cans sliced blackolives
Preparation
Preheat oven to 400degrees Fahrenheit. Grease a 9x13 inch baking pan. In a skillet add thehamburger and onion. Cook until hamburger is brown and onion is tender. Drainthe grease and add the garlic powder, salt and pepper. Add in the tomatoes andcook for 5 minutes. Stir in the water and taco seasoning. Bring to a boil,reduce heat to low, and keep cooking for 5 minutes or until thickened. Pourinto the baking dish, pour the corn on top and set aside. Follow directions onthe packages of corn muffin mix and spread over the top of the corn. Bake 20minutes until the cornbread is golden brown and puffed. Garnish when servedwith cheese and black olives. Makes 16 servings.
Beef & Broccoli
Ingredients
1 tablespoon olive oil
1 lb sliced round steak
salt & pepper totaste
1 sliced onion
2 cups chopped broccoliflorets
1 can cream of broccolisoup
1/4 cup water
3 tablespoons soy sauce
Preparation
In a skillet, heat theoil over high heat. Add the steak, salt and pepper. Cook until beef is close tobeing done and is browned. Add the onions and sauté until they are tender. Addthe soup, soy sauce, and water. Stir well. Reduce heat, cover, and cook untilbroccoli is done to your tenderness. Makes 8 servings.
SloppyJoes
Ingredients
1 pound hamburger
1 1/2 cups ketchup
2 tbsp brown sugar
1 tbsp Worcestershiresauce
6 hamburger buns
Preparation
Cook the hamburger untilbrown and crumbly and is no longer pink. Drain; add the brown sugar, ketchup,and Worcestershire sauce. Bring to a simmer over low heat, continue cooking for20 minutes. Serve on hamburger buns. Makes 6 servings.
