No Eggs Eggs Benedict
Ingredients
7 ounces baby spinach
1 teaspoon olive oil
4 slices of tofu
2 English muffins (prepared)
2 servings of faux meat (prepared)
2 teaspoons white vinegar
1½ tablespoon vegan mayo
1 tablespoon vegan butter
½ tablespoon soy sauce
¼ cup soy milk
1/8 cup yeast
¼ teaspoon paprika
¼ teaspoon turmeric
¼ teaspoon lemon juice
¼ apple cider vinegar
sea salt and black pepper to taste
Preparation
Placespinach in a small pan and sauté in the olive oil. Set aside Next, fry the tofuin the same pan with the left over olive oil and add the soy sauce. Whilefrying the tofu, preheat the oven to 300 degrees Fahrenheit.
Placeall of the other ingredients in a sauce pan and heat on the stove to create theHollandaise sauce.
Now,just layer by starting with ½ of the prepared English muffin, next the spinach,then the faux meat, and last the tofu, top with the other half of the Englishmuffin. Place in the oven for around 7 minutes. Take out of the oven and placeon plate. Pour the sauce over the creation. Makes 2 servings.
Tofu Scramble
Ingredients
1 diced yellow onion
1 diced green bell pepper
2 block of tofu (pressed & drained)
4 tablespoons olive oil
2 teaspoon garlic powder
2 teaspoon onion powder
2 tablespoon soy sauce
4 tablespoon yeast
Preparation
Cutthe tofu into one inch cubes and then crumble a bit. Sauté the pepper, onion,and tofu in the oil for around 4 minutes stirring often. Next, add the rest ofthe ingredients, lower the heat to medium and cook for another 6 minutes. Stiroften and add more olive oil as needed. Serves four.
Tofu Scramble with Cheese
Ingredients
4 tablespoons of olive oil
4 blocks of tofu (crumbled)
2 chopped green bell peppers
8 chopped green onions
2 15 ounce can of diced tomatoes (drained)
1 teaspoon of garlic powder
1 teaspoon of onion powder
2/3 teaspoon turmeric
1 cup shredded cheddar cheese
sea salt and black pepper to taste
Preparation:
Sautéthe tofu along with the green onions and bell pepper in the olive oil until itis slightly browned. Now, add the rest of the ingredients except the cheese.Stir thoroughly and cook for another 7 minutes until it is hot. Serve once youtop with cheddar cheese. Serves 2 to 3.
Vegan Omelet
Ingredients
2 pounds of firm tofu
2 – 4 tablespoons of nondairy milk
4 tablespoons of potato starch
2 teaspoon tahini
¼ teaspoon garlic powder
1 teaspoon salt
olive oil as needed
Toppings can include onions, mushrooms, spinach, vegan cheese, or peppers.
Preparation
Putall the ingredients in a blender. Blend until smooth. Cook all of the toppingsuntil desired tendern
