Introduction

Welcome to this recipe book for delicious cupcakes, biscuits, scones, waffles, homemade bread, icings, fillings and homemade sweets including many popular English favourites for the traditional afternoon tea when something good and sweet is a must.
In fact, any time of day is the right time for a biscuit especially if children are around! So it's a good idea to keep some in stock and homemade biscuits are better tasting!...have them ready for a snack, a bedtime treat, for the school lunch box or picnics and even for a surprise visitor.
And for the special occasion you can tempt anyone with a sumptuous homemade --sweet, no one will say no to.
You'll find the following recipes are really quick and easy to follow and prepare, using common and uncomplicated ingredients.
I'm sure you'll find many recipes will become long-time favourites in your home.
Let's begin with some helpful tips to ensure that nothing goes wrong.
Hints to Ensure Success

- Always read the recipe through carefully and understand it before starting. Then collect together and prepare all the ingredients to be used.
- Always sift the flour.
- Always stir in the same direction.
- Grease all cake tins except when making angel and sponge cakes.
- Never bang the oven door.
- Always work neatly; use as few utensils as possible, and clear up as the cooking proceeds.
- Never mix new flour with old.
- Never begrudge the time you spend on good mixing.
Cakes are often spoiled by over beating after the baking powder has been added; it is therefore advisable to add the baking powder, sifted with a small quantity of the flour, last.
One's usual experience is that if you take no care and make a hurried cake for the family, it is lighter than the cake made for the special occasion. The reason is probably because too much beating has been done after baking powder has been added, or that too much flour has been used.
